Buttermilk Herb Dressing and Croutons

Dressing:
2/3 cup buttermilk
2 tablespoons olive oil
1 tablespoon lemon juice
1 tsp. Dijon mustard
1/2 tsp. salt
1/4 tsp. each pepper and minced garlic
2 tablespoons snipped chives
1 tablespoon chopped fresh thyme

Preparation:
In small bowl whisk all ingredients together.

Croutons:
2 slices of thick Italian bread, crusts trimmed and cubed
1 1/2 tsp. olive oil
1 tsp. finely chopped thyme leaves

Preparation:
In large skillet toast bread cubes in oil over medium high heat tossing for about 5 minutes until golden. Remove from heat and stir in thyme.

Deviled Eggs with Radishes, Chives, And Thyme

10 large eggs, hard boiled, peeled
1/4 cup plain yogurt or mayonnaise
4 teaspoons Dijon mustard
1/3 cup finely chopped radishes
4 teaspoons chopped fresh chives
4 teaspoons chopped fresh thyme
Additional chopped fresh chives, thyme, and radishes

1. Halve eggs lengthwise and transfer yolks to a medium bowl. Mash yolks with fork.

2. Mix in yogurt or mayo and mustard. Mix in 1/3 cup radishes, 4 teaspoons chives and thyme.

3. Season filling to taste with salt and a generous amount of pepper.

4. Spoon into egg whites, mounding center. Top with additional chives, thyme and radishes. Arrange on platter. Garnish with whole radishes.

Sauteed Radishes with Chives

1 bunch radishes (about 6)
1 Tbsp unsalted butter
2 Tbsp thinly sliced fresh chives
Fresh ground black pepper to taste

Halve radishes lengthwise and thinly slice them. In a heavy skillet heat butter over moderately high heat until foam subsides and sauté radishes, stirring, until radishes are crisp-tender, about 3 minutes. Stir in chives, pepper and salt to taste.

Radish & Chive Salad

1/2 cup finely shredded radishes
1/4 cup finely chopped chives
3/4 tsp sesame oil

Toss all ingredients in a medium bowl. Season with salt & pepper.

Napa or Chinese Cabbage with Bacon and Leeks

This recipe for Savoy cabbage braised with bacon, white beans, and sage makes a wonderful supper with crusty bread. It’s also terrific served with roast duck or lamb. High-quality smoked ham or sausage can be substituted for the bacon.

- 3 thick slices bacon, preferably applewood-smoked
- 2 large cloves garlic, minced
- 2 small tender leeks, split, rinsed, thinly sliced
- 1 lg. Savoy or Chinese Cabbage, thinly sliced
- 1 cup chicken stock or broth
- 1/4 cup dry white wine
- 1 1/4 cups cooked white beans
or 1 (15.8 oz.) can rinsed and drained
- 1 Tbsp. finely julienned fresh sage
- 1 Tbsp. finely julienned snipped chives
- Freshly ground pepper

Cook bacon in 12-inch skillet over medium-high heat until crisp. Use slotted spoon to set bacon aside. Drain off all but 2 tablespoons fat.
Add garlic and leeks to skillet. Cook until fragrant, about 2 minutes. Add cabbage, chicken stock, white wine and beans. Gently toss to combine. Simmer until cabbage is just beginning to wilt, about 3 minutes. Crumble bacon. Toss cooked mixture with bacon, sage, chives and pepper. Adjust seasoning. Serve immediately.

Green Tomato Cheese Pie

1 unbaked 9” pie shell
Milk
4 Tbsp butter
2 onions, sliced
1 clove garlic, minced
4 - 5 large green tomatoes, peeled, sliced
3 Tbsp chopped chives
1 Tbsp lemon juice
2 Tbsp flour
1 1/2 tsp salt
1/4 tsp pepper
1 cup sharp cheddar cheese, grated

Brush pie shell with milk, prick with fork and bake in a 450 degree oven 5 minutes. Remove from oven to cool. Melt butter in a large skillet and sauté onions and garlic until tender. Add sliced tomatoes and cook until tender. Add chives, lemon juice, flour, slat and pepper and cook, stirring frequently for about 15 minutes. Pour mixture into pie shell and sprinkle cheese evenly over top. Bake in 400 degree oven 10—15 minutes until top is browned.

Delicata Squash Puree

2 lbs. Delicata Squash
1 lb. potatoes, peeled and quartered
1 cup heavy cream or half & half
2 Tbsp. butter or olive oil
1/4 c. finely chopped fresh chives
salt and fresh ground black pepper to taste

Split the squash in half and scoop out the seeds. Peel the outer skin and cut the squash into 3-inch pieces. Place squash and potatoes in a large saucepan and fill with water and 1/2 tsp. salt. Bring to a boil and cook until both the squash and potatoes are fork-tender (30-40 minutes). Drain liquid (reserving about 1 cup) and add in cream and butter. Using a potato masher, mix well. Add chives and season to taste with salt and pepper. Add cooking liquid if you want it a bit thinner consistency.

Fresh Herb Salad with Edible Flower and Mustard-Dill Dressing

Serves 6

Organic edible flowers are perfect for this, and can include:
nasturtiums, daylilies, pansies, pinks, borage, roses, or flowers from any culinary herb (such as chives).

1 small butterhead lettuce
1 cup baby arugula leaves
1 cup fresh purslane or baby spinach or tat soi
1 cup watercress leaves
1/2 cup loosely packed fresh basil leaves
1/2 cup snipped fresh Italian parsley (flat leaves)
1/2 cup sorrel leaves
1/2 cup baby mustard greens or collard greens
1/3 cup snipped fresh chives
1/4 cup snipped fresh chervil
2 Tbs. snipped fresh dill
1/2-1 cup edible flowers

Dressing:
1/4 cup red wine vinegar
2 Tbsp extra-virgin olive oil
1/2 tsp Dijon mustard
2 tsp honey
1/2 tsp dill seed
1 clove garlic, minced
Salt and pepper, to taste

Wash and gently dry butterhead lettuce, all herbal greens and edible flowers. Tear apart lettuce and any large-leafed herbs. Toss together all greens except flowers in a large salad bowl.

In a small bowl, whisk together all dressing ingredients. Pour
over herb salad and gently toss until well coated. Garnish with
edible flowers and serve immediately.

‘Lemon’ Cucumber Sandwiches

(These yellow round cucumbers are perfect for slicing for sandwiches!)

1 oz. cream cheese
1 Tbs. sour cream
1 1/2 tsp. chives, chopped
Salt and pepper to taste
4 slices sandwich bread
1 ‘Lemon’ cucumber, peeled and sliced thin

Mix together first 4 ingredients and spread evenly on 2 slices of bread. Top with cucumbers, and remaining 2 slices of bread.

Asian Cole Slaw

1 Tbs. soy sauce
2 tsp. garlic, minced
1 Tbs. shallots, minced
1/4 cup rice wine vinegar
1 Tbs. mustard
1/2 cup safflower oil
1/2 cup mineral water
1 tsp. chives, minced
1 1b. carrot, cut into curls or small pieces
1 lb. radish, cut into curls or small pieces
2 Tbs. pickled ginger, minced
1 tsp. black sesame seeds
1 tsp. sesame seeds, toasted

Combine soy sauce, garlic, shallots, mustard, vinegar, oil, water, and chives and whisk until emulsified. Toss carrots, radish, ginger, and 2/3 cup of the soy mixture. Portion the salad on cold plates and drizzle with remaining 1 ounce soy mixture. Sprinkle sesame seeds and black sesame seeds on top of each salad.

Polly's Pumpkin Soup

Serves 6 – 8

Butter for browning
1 pound cooked pumpkin*
1/2 cup diced onions
1 T. honey
12 oz. mushrooms
A dash of nutmeg
3 T. flour
3 cups chicken broth
1 tsp curry powder
Salt and pepper, to taste
1/2 cup half-and-half

In a large pot, melt the butter and brown onions and mushrooms. Stir in the flour and mix to combine. Stir in the curry powder, broth, pumpkin, honey, nutmeg, salt, and pepper. Simmer for 15 minutes. Add the half-and-half and heat until just warm.

*Optional green sauce: 1 cup yogurt mixed with chopped chives, parsley, and green onions.
Ladle the soup into bowls and place a dollop of the green sauce on top if desired.

*Notes: We actually prefer this soup without the “green sauce” on top. I cook the pumpkin by quartering it, cleaning out the seeds and pulp, and then microwaving it until tender. Scoop the cooked pulp out of the skin and puree it in a processor.

Cucumber Salad

1 large cucumber
½ teaspoon salt
½ cup sour cream
4 tsp. vinegar
½ tsp. dill
2 Tbs. chives
dash pepper

Thinly slice the cucumber and spread out on plate or platter. Sprinkle with salt and let sit for 30 minutes. Drain off excess liquid and blot with paper towels. Mix sour cream, vinegar, dill, chives, and pepper in a bowl. Stir in cucumber slices.

Chill until ready to serve.

Baked Scallops and Chives

1 lb. scallops (try those without water injected)
¼ cup chopped onion
4 oz. can mushrooms
¼ cup flour
1/3 cup butter
2 Tbs. chopped chives
crumbled crackers and butter (3:1 ratio)

Drain liquid from the can of mushrooms into measuring cup. Add water to make ¾ cup, and pour over scallops in a saucepan. Bring to a boil, then reduce heat and boil 5 minutes. In skillet, melt butter and add chopped onions, cook until soft, stir in flour.

Add milk to liquid in which scallops were cooked to make 2 cups (I would use at least 1 cup milk), and add to onion. Add mushrooms, chives and salt & pepper to taste. Cook over low heat 3-4 minutes. Add scallops (cut these if you want them smaller). Put in casserole dish and cover with buttered crumbs 3:1. Bake at 350o for 15 minutes.

Herb Butter

Makes about 1 cup

With the metal blade in place, add to the beaker
1/4 c loosely packed mint leaves
1/4 c loosely packed chives
1/4 c loosely packed parsley

Process, turning on and off, until greens are finely chopped. Add 1 c butter, cut in pieces. Process again, turning on and off, scraping sides as necessary to make a smooth butter. This should take about 30-40 seconds.
