Tomato Basil Sauce for Pasta

Serves 3 – 4

6 medium tomatoes, peeled and coarsely chopped
1 cup finely chopped fresh basil]
2 cloves garlic, peeled
1 tsp. salt
¼ tsp. pepper
½ cup olive oil

Chop tomatoes and basil together until finely minced. Place in non-wooden bowl. Stir in garlic cloves, salt, and pepper. Pour oil over in a layer. Cover bowl and let stand at room temperature for 1 hour.

Remove the garlic; stir in the layer of oil until well-blended. Serve over one pound hot,
cooked and drained pasta. Sprinkle generously with freshly grated Parmesan.
